roasted tomato soupby mr.broth
Our family favourite! Loaded with vitamin C, Amino Acids from the bone broth, and yet so so good.
Ingredients (serves 3-4 pax):
2 boxes of cherry tomatoes, cut each into half
1 bulb garlic
4 shallots, peeled
1/2 chopped yellow onion
1 tbsp tomato paste
Drizzle of olive oil
1 tsp dried oregano
1 tub Clear & Classic Chicken Broth by The Daily Broth
Salt and pepper for seasoning
INSTRUCTIONS:
- Preheat your oven to 220 degrees Celsius.
- In a pan, add garlic cloves, shallots, and cherry tomatoes. Season with salt, pepper, and herbs of your choice, and drizzle olive oil on top. Put in the oven and roast for 20 minutes.

Using a saucepan, sauté chopped onions with tomato paste on medium heat. Then add in the roasted tomatoes. Stir thoroughly.

Pour in 1 tub of Clear & Classic Chicken Broth, stir and bring to a boil.

Turn off heat and blend into a thick & glorious consistency

Serve while hot with garlic bread.
