Golden Chicken SoupBy Mr. Broth
A great source of protein, anti-inflammatories, and hydration. All while having a light comforting taste- making it perfect for anyone who isn’t feeling well.
INGREDIENTS:
1 tbsp olive oil
1 Yellow onion
1 Carrot
1 Potato
3 cloves garlic
3 Bay leaves
2 sprigs Rosemary
1 tsp Tumeric powder
Chilli flakes (optional)
1 tub Clear Classic Chicken
1 whole Chicken breast (boiled and roasted) – shredded
1/2 lemon
1 cup Pasta of your choice
1 cup Coriander
500 ml water
Parmesan cheese to sprinkle before serving
METHOD:
1. Heat up oil in a pot on medium heat
2. Dice one onion, and a carrot and add into pot and fry for a minute
3. Add a chopped potato into the pot, sprinkle some salt and fry till onion starts to brown
4. Add in 3 minced garlic and a tablespoon of turmeric and fry for a minute or so
5. Add in a rosemary stalk,3 bay leaves and a pinch of chili flakes and fry for another 30 seconds
6. Pour in one container of The Daily Broth’s Clear and Classic Chicken Bone Broth season a little more with salt and pepper and cover till it comes to a boil
7. Squeeze in half a lemon, add some pulled apart chicken breast of thigh, and add a cup of pasta of your choice.
8. Once pasta is ready, turn off heat and add in chopped coriander
9. Sprinkle cheese on top of bowl before serving
