INGREDIENTS (serves 4-6):
macaroni, cook according to serving size
2 tbsp olive oil
4 garlic cloves, minced
1/2 yellow onion, diced
1/2 cup carrot, diced
2 tbsp all-purpose flour
3 mini (240ml) premium organic chicken bone broth, unsalted from The Daily Broth
1 cup milk, plus more as needed
1 cup chicken, diced
1/2 cup button mushrooms, sliced
1/2 cup frozen peas
seasonings, to taste – mixed herbs, black pepper
INSTRUCTIONS:
Cook the macaroni according to the package instructions. Drain and set aside. In a pot, heat olive oil over medium heat. Add garlic, onion and carrot. Sauté until the vegetables are tender. Stir in all-purpose flour to create a roux. Cook until the roux is lightly golden. Add in chicken stock and milk to the roux mixture, ensuring there are no lumps. Add chicken, mushrooms and seasonings to the pot. Simmer until the chicken is cooked through and the vegetables are tender. Lastly, add in the frozen peas. Allow the soup to continue boiling until the peas are tender and soft. Serve hot, with macaroni or some garlic bread.
